Vettu Cake a.k.a Fried Tea Shop Cake..

   This cake brings back all the nostalgic memories of my summer vaccations..Vettu in malayalam    means CUT...Since this cake is cut from the centre, the name!! Every time i visited kerala, this was a  must have tea time snack. My father used to bring it wrapped in an old newspaper from the nearest  chayya kadda(tea shop). Ayyapan Nair's Tea Shop to be very precise!! 

  Rakesh was beyond schoked today when i served him this cake with tea. "This is so crunchy and    tastes exactly like from kerala bakeries", he exclaimed!! Fairly simple and tasty, lets get  baking(frying in this case!!).

   Whisk together one egg, 1 tsp cardamom powder(freshly grounded), 1/2 cup powdered sugar.



   In it sift 1 cup of all purpose flour, 1/4 tsp baking soda, a pinch of salt and 1 tsp sooji(optional).


   Knead well into a dough. There was no water/milk used. At first it doesnt come together, donot panic, keep kneading for 5-6 minutes and you get a round dough. Keep it aside for 10-15 minutes. 

   After resting for about 15 minutes, roll it out in a log shape. Flour the surface if needed.

    Cut diagonally with a sharp knife into triangles.


   And now the vettu..give a cut from the centre of the triangle.




    Mean while heat some oil and keep it on a medium flame. High flame can cause the cake to       golden fast from outside while remaining uncooked from inside. Fry on a medium flame till golden brown and serve as a tea time snack.
