Guys, i have some Peppermint Mocha Cupcakes Recipe to share for the upcoming holiday season. 
   I am starting off this blog post with a question. Have you guys ever used coffee creamer in anything besides coffee?? If you just answered "NO", this post will surprise you a lot. I say so because even I was so unaware of how much flavor they add to Baked goodies..

Just like other average working women, i like to start my day with a hot cup of coffee. And the best part of festive season is you get coffee creamers in so many amazing festive flavors. My current favorite is International Delight Pumpkin Pie Spice Single Coffee Creamers which i grab and go during morning hours. Makes life so easy.



Tis the season for holiday flavors guys!! And so many amazing of them: Sugar Cookie, Pumpkin Spice, Peppermint Mocha..aren't these flavors so exciting? The upcoming holiday season is one of the perfect way to incorporate International Delight into your morning cuppa and just like these cupcakes, a delicious fall recipe!



Peppermint Mocha is one of my favorite Holiday Flavors. Now as i said, apart from using them in your cuppa, these creamy Peppermint Mocha from International Delight makes for an amazing surprise baking ingredient. I have previously baked a cake with coffee creamer and it was one of the moistest cakes ever. I had baked 6 cupcakes initially and took some to work, all my colleagues were so surprised with the secret coffee creamer as an ingredient that i was asked to bake another batch and this time, a dozen of them!





 I love Peppermint Mocha a lot in general because of the rich taste of chocolate meeting the festive peppermint flavor. It's just delicious. 

Guys, International Delight creamers are easily available at Walmart in refrigerated bins in Diary aisle. You just cannot miss them. I also found the individual size creamers in the Coffee Creamer aisle.

















Without further delay, here is the amazing recipe.

Ingredients:
For Cup Cake:
All purpose flour- 1/2 cup
Granulated sugar- 1/2 cup
Baking Soda- 1/4th tsp
Baking Powder- 1/2 tsp
Egg- 1
Salt- a pinch
Unsalted Butter- 4 tbsp
Vanilla Extract- 1 tsp
International Delight PeppermintMocha Coffee Creamer - 1/4 cup

For Frosting:
Heavy cream - 1/2 cup
Vanilla Extract- 1 tsp
Powdered Sugar- 1/2 cup
(This recipe yields 6 cupcakes)
Method:
1. Keep butter at room temperature first for 1-2 hours so that it softens, followed by egg and coffee creamer for 30 minutes. Sift together the dry ingredients. Preheat oven at 350 F. Cream together butter and sugar. Mix the egg, vanilla extract and coffee creamer and add into the creamed butter.



2. Add the dry ingredients to the wet ingredients. Mix well. With the help of an ice-cream scoop portion out the batter evenly in a lined muffin pan and bake for 20-22 minutes. Check after 20 minutes by doing the toothpick test. Transfer onto a wire rack and allow it to cool completely before frosting.



3. For frosting, whip together, heavy whipping cream, confectionery sugar and vanilla extract till it's stiff enough to hold on its own.


4. Pipe the fresh cream frosting onto the cupcakes. For an additional flavor, i mixed 3 tbsp of my International Delight Peppermint Mocha Coffee Creamer and 2 tbsp of caramel and drizzled on top of the frosting. That took the cupcakes to a whole different level. It was just yum!! Didn't i say ended up making them again for work snack, here is the picture.
