Thursday, November 26, 2015

I have got a great vegetarian appetizer recipe for you all today guys which gets ready in under 30 minutes and is so delicious. Presenting Cheesy Mezzetta Olives Stuffed Mushrooms and an amazing give away at the end of this post.

Happy Thanksgiving everyone. I can't believe it's already Thanksgiving. Is the Turkey ready yet guys?? I am assuming all of you are cooking up a storm right now. I am almost done cooking as i write this. 4 days of holiday is what i see now. That's it. Nothing else!! There are plans to do some shopping also by evening to join the Black Friday Madness!!
Coming to the feast, what are you guys making for appetizers? This Cheesy Olives Stuffed Mushrooms is my go-to appetizer these days because of the easiness and very minimal cooking time needed. Plus who doesn't love stuffed Mushrooms? I am so glad to have used Mezzetta Olives as part of my stuffing. They are the best.

Garlic Stuffed Mezzetta Olives are my absolute favorite! Who doesn't like garlic? These olives add so much flavor to Pizzas, Focaccia Bread, Garlic Bread Sticks etc. They have almost replaced pickles at our home.

Also guys, did you all know that Mezzetta Olives are family owned since 1935 and the fourth generation of Mezzetta family is continuing the tradition of bringing high quality olives in the market. They source the finest fresh produce from the sun-drenched soils of California, Italy, Spain, France, and Greece and prepare them according to their Italian family recipes at their state-of-the-art production facility in the Napa Valley. How cool right??

Now for the give away fun! Mezzetta is hosting a Holiday Memories Sweepstakes where you can win so many cool prizes. Like this Olive Lover's Gift Basket i received. Isn't that cute? Let's get on to the recipe:

Ingredients:
3 Baby Portabella Mushrooms
1 Boiled Potato
5 tbsp grated cheese
1 tsp Italian Spice Mix
1 tsp Garam Masala Powder
1 tsp Salt
4 tbsp thinly sliced Beans
4 tbsp finely chopped Onion
1 thinly sliced spring Onion
Half a tomato finely chopped
3-4 Garlic Stuffed Mezzetta Olives
1 tsp Pepper Powder
2 tbsp Butter
2 garlic cloves crushed

Method:
1. Pre-heat oven at 425 F. Clean the Mushrooms and gently scrape out the inside part. Towel dry. Bake the mushrooms for 7-10 minutes so that they don't turn soggy while baking with the stuffing.

2. While the mushrooms bakes, let's get the stuffing ready. In a saucepan, melt butter, add onions, beans, garlic, olives, tomato and salt. Saute for 2-3 minutes. Add italian spice mix and garam masala powder. Cook for another 2 minutes. Add the mashed boiled potato. Turn off the flame. Once it cools down for 5 minutes, add cheese, spring onion and mix well.

3. Mushroom will shrink in size and also leave water, let it dry on a paper towel with cavity side down for 5 minutes. Fill the stuffing and place some cheese and butter at top and bake for around 10 minutes. Garnish with spring onions and serve hot.
