The paneer that you get here is not very great. It can get really rubbery after cooked, which is a total turn off!! Few months back one of my friends told me about the malai paneer available in indian stores and how soft they were. She was right!! Am hooked onto them. At $6 per 400 gms, they are worth it. This is my style of paneer paratha. You can add veggies that you feel like mixing with paneer, most common being peas, which i didnt have, so just used paneer.
For filling we need: 1/2 tsp cumin seeds, 1/2 tsp carom seeds, 1 tsp salt, 1 green chilli finely chopped, 1/2 a large onion finely chopped, 1/2 tsp coriander powder, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1/2 tsp dry mango powder(amchur), 2-3 sprigs of fresh cilantro minced, 3 large garlic cloves finely minced, 200 gms grated paneer, 1/2 tsp coriander seeds crushed. Mix all together.
Take a ball sized dough, and stuff with the filling. Press it with your palm flattening it. With the help of a rolling pin, gently roll it out to a circle.
On a hot skillet, heat the parathas evenly on each side till golden brown by adding ghee or oil over the sides. Serve warm with pickle or yogurt.
